Tessa's Banana Chocolate Muffins

1 c sugar
1/2 c soft margarine
2 eggs
1 single serving size container of yogurt
3 large or 4 sm bananas
2 c flour
1 1/2 tsp baking powder
1 tsp baking soda
1-2 c chocolate chips (I usually use 1 if I plan to serve them for breakfast or up to 2 if they are for a treat. Also yummy with a combination of chocolate and white chocolate chips)

Cream together sugar and margarine. Add the eggs and beat well. Add yogurt and bananas. Sift flour, baking powder and soda into the wet mixture. Add chocolate chips and mix until just wet. Divide batter between 12 greased muffin tins. Bake at 350F for 30-35 minutes.

Makes 12 large muffins.

  1. Hey Tessa! Just wanted to let you know that I came back to the blog to find this recipe because these muffins are so good! Annika is going to bake some for us. Nice to see that the book club was still going strong until covid - hope you can start to meet up again soon! Hope you guys are well.
