Whole Wheat Fettuccini with Chicken and Broccoli Rabe
2 bunches broccoli rabe, chopped
1 lb whole wheat fettuccine
3 tbsp olive oil
1 lg red onion, chopped
6 lg garlic cloves, minced
2 1/2 lbs skinless chicken breasts, cut into 1 inch strips
salt and pepper, to taste
1 tbsp Italian seasoning
1/2 c white wine
2 heads radicchio. shredded
1 bunch fresh basil, chopped
1/3 c grated parmesan cheese
Bring a large pot of water to a boil over high heat, add salt, then drop in the chopped broccoli rabe. Cook for about 4 min, until tender crisp. Remove from the water, and reserve in a bowl till later. Add the fettuccini to the boiling water and cook.
Meanwhile, warm oil over med heat. Cook the onion and garlic for about 5 min. Add the chicken and season with salt and pepper to taste, then add Italian seasoning. Saute until chicken is cooked through. Add the wine, stirring, and scrape up the brown bits on the bottom of the skillet. Add the broccoli rabes and radicchio and cook for about 5 more minutes.
Serve over fettuccini. Sprinkle with basil and parmesan cheese.
Serves 6-8.
