February 2010: "Gone with the Wind" Recipes

Eggs O'Hara

- Kate, can you share you mom's fabulous vegetable quiche recipe here? It was soo yummy!


Georgia Peach Bread

1/2 c shortening
2 c flour
1 1/2 c sugar
2 large eggs
2 1/4 c pureed peaches (you can use canned or frozen, just make sure the canned are drained well and the frozen are defrosted before using)
1 tsp vanilla extract
1 tsp each cinnamon, baking powder, baking soda
1/4 tsp salt
1 c finely chopped pecans

Grease and flour to loaf pans. Cream the sugar and shortening together in a large bowl. Add the eggs and mix thoroughly. Stir in the peach puree and vanilla. In a separate bowl, combine the dry ingredients. Incorporate the flour mixture into the peach batter until well blended. Fold in pecans. Pour the batter into the loaf pans and bake for 50 min to an hour at 325F. Cool for 15 min before removing from loaf pans.

Melonies

2 ripe honeydew melons (balled or cubed if you don't have a baller)
1/4 c fresh lime juice
3 tbps gin
1/4 c chopped fresh mint
grated zest of 2 limes

Combine all ingredients in a large serving bowl and toss until coated.
