November 2010: Recipes for Silent Spring

Whole Wheat Herb Bread

1/4 c butter, melted and cooled
1 c flour
1 c whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs, beaten
1 c plain yogurt
1/2 c honey
1 tsp each dried dill and oregano
1-2 tbsp fresh basil and rosemary, finely chopped

Sift the dry ingredients together into a large bowl.  In a medium bowl, beat butter, eggs, yogurt and honey with an electric mixer on medium speed until frothy.  Add the herbs and continue beating.  Make a well in the center of the flour mixture.  Pour the egg and butter mixture into the well and stir with a wooden spoon until thoroughly blended.  Pour into a buttered 8X4 inch loaf pan and bake for 40-50 minutes at 350F.  Allow to cool for 1/2 hour before slicing.  Serve warm with butter.

PS.  I made this into "Three Cheese Bread" by replacing the whole wheat flour with all purpose and adding about 3/4 c of each of three different kinds of cheeses (I used cheddar, mozza and fresh parmesan b/c that's what I had handy, and then grated a little extra parmesan on the top). Turned out really yummy!
