Baked Oatmeal recipe

Here is the recipe we were talking about at the meeting last night:

Baked Oatmeal with Fruit * (serves 6)

1/2 c unsweetened applesauce
1 Tbsp baking powder
2 eggs
1 tsp salt
1/3 c sugar

Mix together, then add:

1 c milk
3 c oatmeal
1 (ish) c add-ins **

Pour into greased 9"x9" pan, and sprinkle with:

cinnamon
2 Tbsp brown sugar

Bake at 375* for 35-45 minutes, until centre is set. *** Cut into squares, and serve topped with milk (or cream or whipped cream).

* This is technically supposed to be prepared the night before, to let flavors meld, then baked in the morning. I never do that, but Michelle mentioned that she prepares it the night before, and also mixes in a spoonful of yogurt, which will then ferment overnight (is it not refrigerated then Michelle? What about the eggs and milk?) and is extra healthy.

** Blueberries, strawberries, bananas, (or a combination of fruits), raisins, craisins, chopped apples...the possibilities are endless!

*** The nice thing about this is that you can leave it for a long time and it doesn't hurt it any. I have had mornings that I've put this in the oven and gone to get the kids ready for church, and things go wrong or something and we don't end up eating until an hour or more later, and it's still perfectly fine, just a little crisp along the edges of the pan.

  2. Made this this morning with apple and blueberries - it was delish! Too bad we were out of yoghurt, because I think that would be really good with it. Thanks for the recipe!
