Groundnut Soup Recipe

Groundnut Soup

Grate in the food processor:
     1 med carrot
     1 large onion
Saute in a saucepan with a splash of olive oil until soft.
Then add:
     2 med sweet potatoes (peeled and grated in the food processor)
Add :
     1 carton chicken stock (900 ml)
Simmer over medium for about 10 min until all veggies are cooked.
Stir in:
     2/3-3/4 c peanut butter
     1-2 tsp curry powder (to taste)
     salt to taste
Let cool slightly and then blend with an immersion blender or in batches in a regular blender until smooth.
Add:
    1/2 c heavy cream
Serve hot, but do not let it boil.

  1. I served this with bacon bits and sour cream for the Soup Fest and it won 1st for most original soup and second for best soup. Thanks, ladies for your feedback!
