Just like Zamparini's Mama might have made it...

Zuppa Toscana

4 hot Italian sausages, sliced
1 med onion, diced
2-3 cloves garlic, crushed
1/4 c butter

8-10 c chicken broth
4-6 potatoes, thinly sliced

1 head of kale, cut into bite sized pieces
1 cup heavy/whipping cream
2 tbsp flour

salt and pepper to taste

Brown sausage with onion, garlic and butter.  Add chicken broth and potatoes and cook until potato slices are soft.  Whisk flour into cream and pour into soup.  Stir until smooth.  Add kale and let simmer about 30 min until soup is thickened and kale is well wilted.

Serve with bacon bits.
