"Dinner on a Dime"
Pasta on a Tight Budget
1/4 c olive oil
1 large onion, chopped
2 sm green peppers, cored, seeded, and finely chopped
6 celery stalks, finely chopped
5 garlic cloves, minced
1 (16 oz) can small white beans, rinsed and drained
1 (16 oz) can cannellini beans, rinsed and drained
3 c chicken stock
3-4 tsp hot pepper flakes (to taste)
2 (12 oz) cans water-packed tuna, drained and broken into chunks
salt and pepper to taste
1 1/2 lbs spaghetti noodles, cooked according to pkg instructions
Heat the oil in a large skillet over med-low heat. Add the onion and cook 5-7 min. Add the other veggies and cook another 3 min. Stir in the beans and chicken stock. Raise the heat, bring to a boil, then lower the heat and simmer for 5 min, mashing the beans slightly with the back of a spoon. Add tuna and season. Simmer until heated through. Toss the spaghetti and sauce together in a large serving bowl and serve hot. Sprinkle with parmesan cheese if you like.
Pound Cake Sundaes
1 store bought/home-made pound cake
ice cream - your favorite flavor
chocolate syrup
Slice the pound cake. Pop each slice in the toaster on the low-med setting. When the cake is lightly toasted, place in a shallow dessert dish, top with a scoop of ice cream and drizzle with chocolate syrup. Serve immediately.
