Recipe from "Hospitality" book club discussion

Recipe for Sherrie's appetizer: Bacon Tomato Cups (Pampered Chef recipe)

8 slices bacon, crisply cooked
3 ounces Swiss cheese
2 cans refrigerated biscuits
1 medium tomato, seeded
1/2 cup mayonnaise
1 teaspoon basil
1/2 small onion diced

Coarsely chop bacon, tomato and onion. Grate cheese (3/4 cup). Mix all ingredients except biscuits. Set aside. Separate each biscuit into 2 thinner biscuits. Lay each biscuit over a mini muffin pan cup. Using the mini tart shaper (a Pampered Chef tool), dipped in flour, press each biscuit into each cup (you could improvise and use a spoon, or your fingers for this, too). Fill the cups with the mixture and bake at 375 degrees for 12-15 minutes, or until golden brown. Enjoy!
